Ingredients

Fruit Salad

  • 500g (1lb) watermelon, cubed
  • 260 g (8oz) honeydew melon, cubed
  • ½ small pineapple, chopped
  • 1 mango, diced
  • 250g (8oz) strawberries, halved
  • ¼ cup (5g/ ¼ oz) small mint springs

Lemon Grass Syrup

  • ½ cup (125ml/ 4 fl oz) lime juice
  • ¼ cup (45g/ 1 ½ oz) brown sugar
  • 11 1 stem lemon grass, finely sliced
  • 2 tablespoons grated fresh ginger
  • 1 vanilla bean, split

Directions

  1. Place the fruit and mint in a bowl and mix gently.
  2. To make the syrup, place the lime juice, sugar and ½ cup (125 ml) water in a small saucepan and stir over low heat until the sugar dissolves, then add the lemon grass, ginger and vanilla bean.
  3. Bring to the boil, reduce the heat and simmer for 10 minutes, or until reduced and slightly thickened.
  4.  Remove the vanilla bean, pour the syrup over the fruit and refrigerate until cold.

Note

  • If you prefer your syrup without lemon grass pieces but like the flavour, bruise the white part of the lemon grass with a rolling pin, place in the syrup, cook and remove along with the vanilla bean.
