Ingredients
Fruit Salad
- 500g (1lb) watermelon, cubed
- 260 g (8oz) honeydew melon, cubed
- ½ small pineapple, chopped
- 1 mango, diced
- 250g (8oz) strawberries, halved
- ¼ cup (5g/ ¼ oz) small mint springs
Lemon Grass Syrup
- ½ cup (125ml/ 4 fl oz) lime juice
- ¼ cup (45g/ 1 ½ oz) brown sugar
- 11 1 stem lemon grass, finely sliced
- 2 tablespoons grated fresh ginger
- 1 vanilla bean, split
Directions
- Place the fruit and mint in a bowl and mix gently.
- To make the syrup, place the lime juice, sugar and ½ cup (125 ml) water in a small saucepan and stir over low heat until the sugar dissolves, then add the lemon grass, ginger and vanilla bean.
- Bring to the boil, reduce the heat and simmer for 10 minutes, or until reduced and slightly thickened.
- Remove the vanilla bean, pour the syrup over the fruit and refrigerate until cold.
Note
- If you prefer your syrup without lemon grass pieces but like the flavour, bruise the white part of the lemon grass with a rolling pin, place in the syrup, cook and remove along with the vanilla bean.
