Family members who like old-fashioned pudding will love this sticky-toffee fruit layer topped with a healthful and delicious crunchy oat mixture.

Ingredients

Filling:

  • 1 lb (450 g) rhubarb, trimmed and cut into 1-in (2.5 cm) lengths
  • grated rind and juice of 1 orange
  • 1 tbsp water
  • 2 oz (60 g) pitted dates, chopped
  • 2 tbsp maple syrup

Topping:

  • 7 1/2 oz (210 g) wholemeal breadcrumbs
  • 5 oz (140 g) rolled oats
  • 3 oz (85 g) soya margarine, melted
  • 2 oz (60 g) light brown unrefined sugar

 

Directions:

  1. Set the oven to 180’C/350’F/Gas 4.
  2. Place the rhubarb, orange juice and rind, water, dates and maple syrup in a 2 1/2 pint (1.5 litre) ovenproof dish.
  3. For the topping, mix together the breadcrumbs, oats, margarine and sugar, and spread the topping over the fruit.
  4. Bake in the oven for about 35 minutes, until the topping is golden.
  5. Serve piping hot.
