Crispy and delicious, these bite-sized balls are a winner! A little bit more preparation time but definitely worth it as they literally crunch in the mouth with a soft savoury centre. Add a healthy dipping sauce, and voila, snack or meal is served!

Ingredients:

  • 2 x cups black-eyed peas (soak overnight in water, covered)
  • 1 x tbsp soy sauce
  • 1/2 tsp sea salt
  • 2 x cups of safflower oil (or similar high smoke-point oil)
  • 1 x tsp cumin
  • 2 x tbsp chopped fresh parsley

Dipping Sauce

  • 1/2 cup rice syrup
  • 1 x tbsp dijon mustard

Directions:

Balls

  • Drain the soaked beans and place in food processor
  • Add parsley, soy sauce and cumin
  • Blend until everything is chopped to fine pieces but be careful not to blend to a pulp!
  • The mixture will feel slightly wet but should be able to hold together
  • Remove mixture from food processor and form into small balls (size up to you)!
  • Heat oil in wok or deep fry-pan -make sure hot enough that when you drop in a bean ball it sizzles like crazy!
  • NOTE that oil should not get so hot that it smokes
  • Place 4 or so balls in oil
  • Balls will rise to the top of the oil as they bubble and cook
  • Fry for about 4 minutes on each side (turn balls over in oil)
  • Once cooked, use a slotted spoon and remove balls and place on paper-towel lined plate

Dipping Sauce

  • Stir together the rice syrup and mustard in a small saucepan
  • Warm sauce over low heat till it starts to bubble
  • Finally serve your black-eyed pea cakes while still hot! Drizzle in dipping sauce and serve with a side salad, or else present balls on a platter with dipping sauce to accompany!

Variation:

Can substitute parsley for fresh coriander. You can also try other dipping sauces that match your tastes. Chipotle dip is a really nice one with these.

Chipotle Dip:

  • ½ teaspoon lime juice
  • ¼ cup mayonnaise (silken tofu, tahini, vegenaise)
  • ¼ to ½ teaspoon chipotle powder. You can substitute it with smoked/regular paprika if you prefer
  • Mix it all together in a bowl. Keep it chilled until it’s ready to serve.
