Vegan Butterscotch Pudding

It tastes unbelievable! Its a fantastic way to finish off a dinner party (those who aren’t vegan cant even notice the difference) or its is a lovely treat to have any night of the week after dinner.

Preparation: 10-15 minutes plus 30-40 minutes cooking time

Pudding Ingredients

  • 1 cup of self raising flour
  • 3/4 of a cup of sugar
  • 90gm of vegan margarine
  • 1/2 a cup of soya milk
  • 2 tablespoons of golden syrup
  • 1 1/2 cups of hot water

Butterscotch Sauce Ingredients

  • 55g Nuttelex
  • 110g dark brown sugar
  • 110mL soya milk
  • 5mL vanilla extract


  1. Sift the sugar and flour into a bowl.
  2. Melt the margarine and add to the flour mix, then combine thoroughly with the rest of the ingredients.
  3. Place into a well greased oven-proof dish.
  4. In small saucepan over low to medium heat, melt Nuttelex and dissolve sugar into it.
  5. Remove from heat and add soya milk and vanilla. Mix thoroughly
  6. Gently pour the sauce over the pudding mixture in the oven-proof dish.
  7. Bake in a moderate oven for 30-40 minutes.
  8. Serve up with a sprinkle of icing sugar, fruit, vegan cream/ice cream etc.
