- 1 clove of organic
- 2 sticks
- 1 can of chopped
- 1 can of
- 1 cup of veg stock
- 1 teaspoons of
- oil for frying
- Chop onion and garlic and fry until soft.
- Add chopped carrot, capsicum, celery and chilli powder, stir until soft.
- Add tomatoes, stock and beans.
- Simmer for 30 minutes.
- Serve as soup with fresh , OR with and sliced avocado, OR on a bed of for a heartier meal.
