This colourful dish is full of flavour and versatile in presentation.

Ingredients

  • 1 onion
  • 1 clove of organic garlic
  • 2 capsicums
  • 2 celery sticks
  • 1 carrot
  • 1 can of chopped tomato
  • 1 can of kidney beans
  • 1 cup of veg stock
  • 1 teaspoons of chilli powder
  • Coriander
  • oil for frying

Directions

  1. Chop onion and garlic and fry until soft.
  2. Add chopped carrot, capsicum, celery and chilli powder, stir until soft.
  3. Add tomatoes, stock and beans.
  4. Simmer for 30 minutes.
  5. Serve as soup with fresh coriander, OR with corn chips and sliced avocado, OR on a bed of rice for a heartier meal.
