Very healthy with lots of veggies and lentils – Satisfying mix of carbs and protein! No fat and delicious!

 

Ingredients

  • 2 cups of potato
  • 2 cups of pumpkin
  • 1 cup of sliced green beans
  • 1 can of tomatoes
  • 3/4 of a cup of red lentils
  • 2 vegetable stock cubes
  • 2 cups of water
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1/2 a teaspoon of turmeric
  • 1 teaspoon of fresh/crushed ginger
  • 1 teaspoon of crushed garlic

Directions

  1. Chop veggies.
  2. Put all ingredients into a largish saucepan.
  3. Bring to the boil.
  4. Simmer for around 35 minutes, stirring at regular intervals.
  5. Serve and Enjoy

Variation

    1. Use sweet potato in place of potato or  do half of each.

 

    2. Put in  1 1/2 teaspoons of the spices for an even spicier hit or lessen the amount from 1 teaspoon for a lightly flavoured hotpot.

 

    3. Use any green vegetable in place of green beans.
